Ingredients

Serves 1

  • ground almondsground almonds 2 tbsp

  • ground flaxseeds 2 tbsp

  • whole flaxseeds 1/2 tbsp

  • melted coconut oil 1/2 tsp

  • egg 1 nos

  • salt 1 pinch

  • water 1/4 cups

Directions

    Combine all ingredients together in a bowl and whisk until combined

  • 02

    Heat 1/2 a teaspoon of coconut oil in a pan on medium heat

  • 03

    Pour in the mixture and spread it out

  • 04

    Cook for 2-3 minutes on until the edges are cooked and the middle is starting to firm up

  • 05

    Carefully flip and cook for a further 1 minute

  • 06

    Place on a plate and top with your favourite salad ingredients

  • 07

    I used pumpkin hummus, tomato, lettuce and feta cheese
