Ingredients

Serves : 2
  • 200 gms bhindi (okra)


  • 2 nos onions (thinly sliced)


  • 1 nos tomato (deseeded and chopped)


  • 1/2 nos ginger julienne


  • 2 nos green chillies (halved and chopped)


  • 1/2 tsp cumin seeds (jeera)


  • 1/2 tsp coriander seeds (sabut dhania)


  • 1/4 tsp turmeric powder (haldi)


  • 1/2 tsp red chilli powder (lal mirch)


  • 1/2 tsp coriander powder


  • 1/4 tsp garam masala


  • 1/4 tsp crushed red chilli


  • 1 1/2 tbsp vegetable oil


  • 2 tsp coriander chopped


  • 1/4 tsp dry mango powder (amchur)


  • 1/2 tsp salt or to taste

Directions

  • Heat oil in a pan, add cumin, coriander seeds, Ginger and green chillies. Fry them until fragrant.
  • Add onions and fry them until golden brown. Don't burn them.
  • Add tomatoes, cook till they are mushy.
  • Add red Chilli powder, crushed red Chilli, coriander powder, turmeric powder. Saute for a minute.
  • Add Bhindi (Okra), mix well, cover and cook for a minute.
  • Add garam masala, dry mango powder, half of chopped coriander, salt and mix well.
  • Cover and cook till Bhindi is done. Garnish it with rest of chopped coriander.
  • Serve hot with paranthas or chapatis.
