Bhindi (Okra) 200 gms
onions (thinly sliced) 2 nos
tomato (deseeded and chopped) 1 nos
Ginger Julienne 1/2 nos
Green chillies (halved and chopped) 2 nos
cumin seeds (jeera) 1/2 tsp
coriander seeds (sabut dhania) 1/2 tsp
turmeric powder (haldi) 1/4 tsp
red Chilli powder (Lal mirch) 1/2 tsp
coriander powder 1/2 tsp
garam masala 1/4 tsp
crushed red chilli 1/4 tsp
vegetable oil 1 1/2 tbsp
coriander chopped 2 tsp
dry mango powder (amchur) 1/4 tsp
Salt or to taste 1/2 tsp
Heat oil in a pan, add cumin, coriander seeds, Ginger and green chillies. Fry them until fragrant.
Add onions and fry them until golden brown. Don't burn them.
Add tomatoes, cook till they are mushy.
Add red Chilli powder, crushed red Chilli, coriander powder, turmeric powder. Saute for a minute.
Add Bhindi (Okra), mix well, cover and cook for a minute.
Add garam masala, dry mango powder, half of chopped coriander, salt and mix well.
Cover and cook till Bhindi is done. Garnish it with rest of chopped coriander.
Serve hot with paranthas or chapatis.
