1 All sorts of vegetables can be used in this dish. whatever you have on hand
3 tablespoons of olive oil
1 onion or leak, chopped
1 tablespoon minced garlic, optional
2 tablespoons fresh parsley chopped or other herbs
1/2 cup chopped cooked vegetables or spinach (optional)
1 pinch Salt and pepper
4 eggs
Directions
Heat an ovenproof Skillet over medium heat and add 2 tablespoons olive oil. Saute onions until soft and add garlic and parsley or your choice of herbs. Turn heat down to medium-low. If using cooked vegetables or leafy greens add vegetables and turn the heat down to low. after the vegetables are warmed. Beat the eggs with a little almond milk and salt and pepper. Pour eggs into skillet and use a spoon to do distribute the vegetables evenly. Cook intil the eggs are barely set, 5 to 10 minutes. Place under the broiler for 1 minute to set the eggs on the top if needed. Great cheese over the top and serve warm at room temperature
