Soak the 1.5cups soya granules/nuggets in 4 cups water for minimum 10-20 mins. Once they swell up cook them with the soaking water on a gas stove for 4-5mins add the salt, half the turmeric, cumin, corriander powder while boiling the soya granules. After its cooked let aside to cool. After its cooled drain the water and squeeze the extra water out f the soya.
Heat around 100ml oil in a large heavy bottom sauce pan. Add the onions, garlic, green chillies, half of the chopped coriander leaves and saute till tender. Add the cooked soya granules to the saucepan and toss in the oil. Add the remaining spices and salt and pepper according to taste. Add more oil if needed and saute for a minute or two and turn off the heat
Now peal the boiled and cooled potatoes and mash them till lumpy. Mix the potatoes in the soya mixture and have a final taste to adjust the salt and pepper.
Oil your hands. Take some mixture in your palms and shape the mixture into the shape of patties.
For the batter. Mix all the flours and the cornstarch in some water to make a thick paste.
In another plate place flour for dredging. And in a separate plate keep breadcrumbs for coating over the batter.
Now dredge the patty in flour. Then dip it in the batter and then finally coat the patty in breadcrumbs. Repeat the dipping in batter and coating in breadcrumbs again if patty not fully covered. You can keep the parties in the fridge to set if you want.
Heat oil for frying in a pan. When oil is hot Slide the patty slowly into oil and fry till crispy brown on both sides.. Place them on kitchen towels to drain off exes oil. Cool. Serve them up in burger buns with ketchup, mayo/mustard and a salad!
