  • 1) 10-15 green bananas/plantains


  • 2) Super fine Salt and sugar (to taste)


  • 3) oil for frying (coconut oil preferred)


  • 4)Kitchen towels/newspaper/tissues

Directions

  • Make a small vertical cut lengthwise on the green skin of the raw banana. Enough to pierce the skin of the banana. Don't worry of you pierce the flesh too. Now use this cut to tear off (pry open)the remaining skin with your hands.
  • After the raw banana is out from its skin. Cut the banana into thin slices.(the thinner the better). You may also use a slicer .
  • While prepping the bananas , heat oil in a frying pan/ copper bottom pan. About 190 degree Celsius. If no thermometer just test the oil by gently dropping a banana slice in the pan. If it starts floating in the oil the oil is good for frying the rest .
  • Fry the bananas by slowly sliding the slices into the hot oil. Careful do not throw the slices in the hot oil or the oil will splatter! Fry them in batches. Do not overcrowd the pan. Fry till the chips change color to golden /golden brown. With the help of a slotted remove the chips and place them on kitchen towels/tissue paper/newspapers to drain off the excess oil. Let the chips cool. Toss the chips in salt and sugar according to taste. Alternatives are peri-peri mix, garlic powder.
  • Eat immediately and store the rest in an airtight container for crispy chips anytime!
