Place roasted chestnuts in a saucepan with water, caster sugar and split vanilla bean and seeds. Stir over medium-high heat until sugar dissolves. Simmer for 25 minutes. Cool slightly. Discard vanilla. Strain. Reserve syrup.
Process nuts and 2 tbs syrup in a food processor until smooth. Add a little more syrup to form a paste. Seal in a sterilised jar.
