Parsley pesto garlic breads

  • 1 1/2 cups fresh flat-leaf parsley leaves

  • 1/4 cup pine nuts, toasted

  • 1/2 cup finely grated parmesan

  • 3 garlic cloves, crushed

  • 125g butter, softened

  • 2 x 30cm baguettes

    Place parsley, pine nuts, parmesan and garlic in a food processor. Process until almost smooth. Add butter and pulse until combined. Season with salt and pepper.

    Preheat oven to 200C/180C fan-forced. Cut each baguette into 2cm-thick slices, being careful not to cut the whole way through. Spread butter mixture over cut sides of bread. Wrap each baguette in foil.

    Place bread on a baking tray. Bake for 18 to 20 minutes or until golden and crisp.
