Description

Serve these tasty beef burgers with potato wedges for a complete mid-week meal.

Ingredients

Serves :
  • 1/4 cup olive oil


  • 1 onion, finely diced


  • 4 garlic cloves, crushed


  • 1 cup flat-leaf parsley leaves, chopped


  • 1/4 cup basil leaves, chopped


  • 2 tablespoons rosemary leaves, chopped


  • 2 teaspoons ground fennel


  • 1/2 cup dried breadcrumbs


  • 220g ricotta cheese


  • 1/4 cup grated parmesan cheese


  • 1 lemon, rind finely grated


  • 700g lean beef mince


  • 6 tasty cheese slices


  • 6 hamburger buns, split, toasted, buttered tomato sauce, sliced lettuce, sliced tomato, sliced roast capsicum, cooked onions and oven-baked potato wedges, to serve

Directions

  • panHeat 1 tablespoon oil in a frying pan over medium heat. Add onion and garlic. Cook for 2 minutes or until onion is soft.
  • Combine herbs, fennel, breadcrumbs, ricotta, parmesan, lemon rind, mince, onion mixture and salt and pepper in a large bowl. Cover and refrigerate for 30 minutes.
  • Preheat oven to 130°C. Shape mince mixture into six 1cm-thick patties. Heat remaining 2 tablespoons oil in a frying pan over medium heat. Cook patties, 3 at a time, for 5 minutes each side.
  • Top each patty with cheese. Place on an oven tray in the oven to keep warm.
  • Spread bun bases with tomato sauce. Top with lettuce, tomato, capsicum, patties with cheese and cooked onion. Cover with bun tops. Serve with potato wedges.
