3 large corn cobs, husk and silk removed
2 large orange sweet potatoes (kumara), peeled
80mls (1/3 cup) balsamic vinegar (optional)
Directions
Cut corn cobs into 3cm-thick slices and cut orange sweet potatoes into 2-cm thick slices. Bring a large saucepan of water to the boil. Add corn and boil for 8-10 minutes or until just tender. Remove corn with a slotted spoon and refresh l under cold running water. Add the sweet potatoes to the boiling water and boil for 8-10 minutes. Drain and refresh under cold running water.
Preheat a barbecue grill or a chargrill on medium-high. Cook corn and sweet potato in slices on the barbecue or chargrill for 2-3 minutes each side or until cooked through and charred. Sprinkle with balsamic vinegar, if desired, and serve warm or at room temperature
