Ingredients

Serves :
  • 3 Hass avocados


  • 1/3 cup (80 ml) lime juice


  • 2 cloves garlic, finely chopped


  • 1/2 small red onion, finely chopped


  • 1 long red chilli, finely chopped


  • 1 medium vine tomato, seeded, finely chopped


  • 1/2 teaspoon cumin


  • 1 bunch fresh coriander, finely chopped


  • Sea salt & freshly ground black pepper, to taste


  • 6 soft burrito tortillas


  • Vegetable oil for deep frying

Directions

  • Halve avocados lengthways, remove seed, and scoop flesh into a medium bowl. Add lime juice and mash to combine. Add garlic, onion, chilli, tomato, cumin, coriander, salt and pepper, then mix well. Cover with plastic wrap and set aside.
  • Tear each tortilla into eighths (they will resemble corn chips). Heat oil in wok or deep pan. Cook tortilla chips in batches, until golden and crisp, (they will crisp further when removed from oil) and drain on absorbent paper. Serve immediately.
