This dinner-party favourite combines prawns, spinach, lemon and a homemade dressing.

Serves :
  • 1 kg cooked prawns, peeled, deveined, tails intact

  • 150g pkt baby spinach

  • 1/4 cup extra virgin olive oil

  • 1/4 cup lemon juice

  • 2 tablespoons basil, chopped

  • 2 lemons, thinly sliced


  • Arrange prawns, spinach and lemon slices in individual serving bowls.
  • Dressing: Whisk together dressing ingredients and season well with salt and pepper. Drizzle over prawns before serving.
