Indian rice pudding

Ingredients

Serves :
  • 2 x 400ml cans coconut milk


  • 1 tablespoon brown sugar


  • 1 teaspoon ground cardamom


  • 1 cinnamon stick


  • 1 cup basmati rice


  • 395g condensed milk


  • Pistachios, toasted and chopped, to serve

Directions

  • In a medium saucepan, combine coconut milk, sugar, cardamom and cinnamon. Stir in rice. Bring to the boil on high. Reduce heat to low and simmer, stirring, for 15-20 mins until rice is tender.
  • Stir condensed milk through. Cook on low for a further 2 mins.
  • Meanwhile, to make dried fruit syrup, heat water, sugar, cardamom and star anise in a small pan on high. Heat, stirring, until sugar dissolves. Add fruit and bring to the boil without stirring. Reduce heat to low and simmer for 8-10 mins, until fruit is tender and syrup has thickened slightly.
  • Serve rice pudding topped with fruit and syrup. Sprinkle with chopped pistachios.
