A salsa is a mixture of chopped vegetables or fruit with a variety of flavourings. A side dish originating in Mexican cuisine, it is now popular served with barbequed meats, chicken or seafood. Tomatoes are often used as the base and combined with cucumber, onion, garlic, herbs and lemon or lime juice. Salsas can be fresh or cooked and range from spicy to sweet. Other favourites include mango, corn, avocado, pawpaw, coriander, chilli and pineapple.

Ingredients

1 medium tomato
12 yellow cherry tomatoes
1 shallot
1 large jalapeno chilli, minced
2 tablespoons fresh coriander, chopped
2 tablespoons fresh lime juice
Salt and pepper
Directions
Finely dice the vegetables. Tomatoes need to be deseeded to reduce the moisture.
Combine ingredients in bowl and season to taste with salt and pepper.
Cover with plastic wrap and set aside for the flavours to develop.
Serve the salsa as an accompaniment to barbequed meats or with crusty bread.
