Place noodles (from kit) in a heatproof bowl. Cover with boiling water. Stand for 5 minutes or until tender. Drain. Rinse under cold water. Set aside.
Heat oil in a wok or frying pan over medium heat. Add laksa paste sachets (from kit). Cook, stirring, for 2 minutes. Add coconut milk (from kit) and water. Simmer for 2 minutes.
Add carrot, snow peas and prawns. Simmer for 2 to 3 minutes or until vegetables and prawns are just tender.
Place half the noodles in a deep bowl. Spoon over half the laksa (reserve the remainder for the next day).
Top laksa with beansprouts and coriander. Serve.
