Pimms strawberries with vanilla ricotta

Fresh strawberries are given a lift with Pimm's and icing sugar, then topped with creamy vanilla-flavoured ricotta in this low-fat dessert.

Ingredients

Serves :
  • 60ml (1/4 cup) Pimm's No 1 Cup


  • 1 1/2 tablespoons icing sugar mixture, sifted


  • 2 x 250g punnets strawberries, washed, hulled


  • 160g (2/3 cup) fresh low-fat ricotta


  • 1 teaspoon vanilla bean paste


  • 12 pieces almond bread

Directions

  • Place the Pimm's and 1 tablespoon of icing sugar in a medium stainless steel bowl. Stir until the sugar dissolves.
  • Add the strawberries to the Pimm's mixture and stir to coat. Cover with plastic wrap and place in the fridge for 30 minutes to macerate.
  • Combine the ricotta, vanilla bean paste and remaining icing sugar in a small bowl.
  • Divide the strawberries among serving glasses. Top with a dollop of ricotta mixture and serve with almond bread.
