Ingredients

Serves :
  • 2 cups dry red wine


  • 1 cup caster sugar


  • 2 cinnamon sticks


  • 2 star anise


  • 6 plums

Directions

  • Combine wine, sugar, cinnamon sticks and star anise in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Bring to the boil. Reduce heat to low.
  • Add plums. Cook for 2 minutes or until just heated through.
  • Use a slotted spoon to transfer plums to a sterilised jar. Pour over syrup. Seal while hot. Label and date. Set aside for 2 weeks to infuse.
