2 medium ripe avocados, halved, stoned, peeled
60mls (1/4 cup) fresh lemon juice
1 medium ripe tomato, quartered, deseeded, finely chopped .......
2 small fresh red chillies, deseeded, finely chopped
1 garlic clove, crushed
Salt & ground black pepper, to taste
1 medium baguette (French stick), cu tinto lcm-thick slices
2 tablespoons olive oil
Directions
Preheat grill on medium-high.
Mash the avocados and lemon juice in a medium bowl with a fork until smooth. Stir in the tomato, chillies, garlic and salt and pepper to taste and mix until well combined.
Lightly brush the baguette slices on both sides with the olive oil. Place on a grill tray and cook under the preheated grill for 1-2 minutes on each side or until golden. Serve the guacamole with the toasted baguette slices.
