Serves :
  • 2 medium ripe avocados, halved, stoned, peeled

  • 60mls (1/4 cup) fresh lemon juice

  • 1 medium ripe tomato, quartered, deseeded, finely chopped .......

  • 2 small fresh red chillies, deseeded, finely chopped

  • 1 garlic clove, crushed

  • Salt & ground black pepper, to taste

  • 1 medium baguette (French stick), cu tinto lcm-thick slices

  • 2 tablespoons olive oil


  • Preheat grill on medium-high.
  • Mash the avocados and lemon juice in a medium bowl with a fork until smooth. Stir in the tomato, chillies, garlic and salt and pepper to taste and mix until well combined.
  • Lightly brush the baguette slices on both sides with the olive oil. Place on a grill tray and cook under the preheated grill for 1-2 minutes on each side or until golden. Serve the guacamole with the toasted baguette slices.
