Ingredients

Serves :
  • 300g (2 punnets) raspberries


  • 185ml (3/4 cup) water


  • 165g (3/4 cup) caster sugar


  • 2 5cm strips orange rind, white pith removed

Directions

  • Place the raspberries in the bowl of a food processor and process until smooth.
  • Place the water and sugar in a medium saucepan and stir over low heat, without boiling, until the sugar dissolves. Add the orange rind, increase heat to high and bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 2 minutes. Remove from the heat and set aside for 2 minutes to cool slightly.
  • Remove the orange rind and discard. Stir the raspberry puree into the syrup. Strain the mixture through a clean sieve into a clean bottle and discard the seeds.
