Ingredients

Serves :
  • 8g sachet dried yeast


  • 3/4 cup (180ml) warm water


  • 1/2 teaspoon caster sugar


  • 2 cups (300g) plain flour


  • 1 teaspoon salt


  • 1/3 cup pizza sauce


  • 150g marinated artichokes, sliced


  • 150g chargrilled capsicum, sliced


  • 140g prosciutto


  • 60g pitted Kalamata olives


  • 170g bocconcini, sliced


  • 30g baby rocket leaves

Directions

  • Preheat oven to 200°C. Whisk yeast, water and sugar together. Set aside for 10 mins. Sift flour and salt into a large bowl. Stir yeast mixture into flour and mix well.
  • Knead dough on a floured surface for 5 mins. Place into a large greased bowl. Cover and leave in a warm place for 45 mins. Punch down dough and knead until smooth.
  • Divide in half. Roll out each portion on a lightly floured surface into a circle 28cm in diameter. Place each onto a pizza tray.
  • Spread bases with pizza sauce. Top with artichokes, capsicum, prosciutto and olives. Bake for 18-20 mins. Arrange bocconcini on top. Cook for 2 mins. Serve topped with rocket.
