Ingredients

Serves :
  • 250g sweet potato


  • 300g desiree potato


  • 150g beetroot, peeled


  • 2 teaspoons olive oil


  • 1 red onion, thinly sliced


  • 175g bacon, cut into matchsticks


  • 1 clove garlic, crushed


  • 1/3 cup white wine


  • 200g brie, cut into 1cm cubes


  • 2 teaspoons fresh thyme leaves


  • 1/3 cup cream

Directions

  • Preheat oven to 200C/180C fan forced. Use a knife or mandolin to cut sweet potato, desiree potato and beetroot into matchsticks.
  • Heat olive oil in a saucepan. Add red onion and bacon. Cook, stirring, for 5 minutes. Add garlic and cook for 1 minute or until aromatic. Add white wine and cook for 2 minutes.
  • Stir in combined potato, brie and thyme. Gently stir in beetroot. Divide mixture among eighteen 2-tbs lightly greased pans (see Notes). Drizzle cream over the mixture.
  • Bake for 25-30 minutes or until golden and bubbling. Stand in pan for 5 minutes before serving.
