Olive oil spray
1 onion
2 small zucchini, chopped
2 small carrots, peeled, chopped
500g lean beef mince
1 egg, lightly whisked
1 x 250g pkt instant dried cannelloni tubes
1 x 500g btl bought tomato pasta sauce
125ml (1/2 cup) light thickened cream
100g (1 cup) coarsely grated mozzarella
Directions
Preheat oven to 180°C. Spray a 25 x 30cm (base measurement) baking dish with oil.
Process the onion, zucchini and carrot in a food processor until finely chopped. Transfer to a bowl. Add the mince and egg. Season with salt and pepper. Use clean hands to mix until well combined. Stuff the mixture into the cannelloni tubes. Arrange the cannelloni in a single layer in the baking dish.
Pour the pasta sauce evenly over the cannelloni. Pour over the cream. Sprinkle with the mozzarella. Bake for 40 minutes or until golden.
