This tasty rice is the perfect accompaniment to a traditional curry or as a spicy side for a roast dinner.

Ingredients

3 green cardamom pods
2 teaspoons olive oil
1 large brown onion, halved, thinly sliced
1 small fresh green chilli, deseeded, finely chopped
1 teaspoon yellow mustard seeds
1 teaspoon ground turmeric
1 teaspoon salt
1/2 teaspoon ground coriander
400ml boiling water
250g cauliflower, cut into florets
200g (1 cup) SunRice Basmati Rice
80g (1/2 cup) frozen peas
2 green shallots, trimmed, finely chopped
Directions
Split the cardamom pods and remove the seeds. Use the flat side of a knife to lightly crush the seeds.
Heat the oil in a medium saucepan over medium heat. Add the onion and cook, uncovered, stirring often, for 10 minutes or until the onion is soft. Remove from the heat and stir in the cardamom seeds, chilli, mustard seeds, turmeric, salt and coriander. Return to medium heat and cook, stirring, for 1 minute or until aromatic.
Add the water, cauliflower and rice, and stir to combine. Bring to the boil, then reduce heat to medium-low. Cover with a tight-fitting lid and cook for 5 minutes. Quickly lift the lid and scatter the frozen peas over the rice mixture - do not stir. Cover and cook for a further 10 minutes.
Remove the pan from the heat and use a large metal spoon to stir in the green shallots. Serve immediately.
