Ingredients

Serves :
  • 2 sheets frozen puff pastry, just thawed


  • 200g fresh ricotta cheese (from Coles deli counter)


  • 2 tablespoons Gourmet Garden Mediterranean Seasoning


  • 3 x 150g Coles Brand Antipasto Tubs, drained and roughly chopped


  • 120g Coles Brand 4 Leaf Salad Mix (pkt)


  • Olive oil and white wine vinegar, to serve

Directions

  • Preheat oven to 200C (180C fan-forced). Line 2 large oven trays with baking paper. Cut each pastry sheet into four squares. Place onto trays and, using a small, sharp knife, score a line around each square, about 1cm from the edge. Prick inside the line with a fork.
  • Combine ricotta and herbs and spread onto pastry squares inside the line. Divide antipasto between each square, arranging it on top of ricotta. Bake for 15-20 mins, until golden brown.
  • Drizzle salad very lightly with oil and vinegar and toss to combine. Serve with the tarts.
