In this recipe, the individual ingredients are prepared and set aside first and then layered like a lasagna to cook and combine into one rich indulgent main course.(I am using a 25 cm dia dutch oven)
Sautee Onions and peppers with salt till onions are golden
Roast the tomatoes
Sautee the mix veg with salt to taste. add in the cream and herbs and cook till reduced and veggies are tender
Crack the eggs and beat then till fluffy. Make an omelette that would cover the entire diameter of your casserole dish
Sautee the mince with salt and pepper seasoning till cooked
Arranging the casserole:Oil the base of your casserole dish.Now spread a layer of potato mash as the baseOn top of this spread the onionsNext arrange the roasted tomatoes
Add the grated cheese, spread it evenPlace the Omelette over thisSpread the creamy mix veg in a layerLayer out the mince on top of the veggiescover with cheese slices
Close the lid of the casserole and cook on medium flame for 15 minutes.
What you will get is layered casserole with a golden brown potato hash base. Enjoy!
