Great for the out-of-town guests staying for the holidays. Not your boring scrambled eggs for Breakfast! Allergies: dairy, wheat.

1⁄2 cup flour
1teaspoon baking powder
3⁄4 teaspoon salt
1pint cottage cheese (I use low fat)
16ounces grated cheddar cheese
1⁄2 cup butter, melted
2 (4 ounce) cans green chilies
Beat eggs lightly until lemon colored.
Add flour, baking powder, salt, cottage cheese, cheddar cheese, green chilis and butter.
Pour into well greased baking dish.
Bake at 350 degrees for 35 minutes.
If from the refrigerator, let dish come to room temp before baking.
Should puff up in oven.
