Ingredients

Serves 1

  • 3 onions , sliced thin (vidalia for sweeter preference)

  • 2tablespoons olive oil

  • 2tablespoons butter

  • 2sprigs thyme

  • 8ounces frozen puff pastry (I used Pepperidge farm)

  • 5ounces soft fresh goat cheese

  • 1teaspoon fresh ground black pepper

Directions

    Preheat oven to 400°F.

    Heat a pan over low heat.

  • 03

    Melt the butter and olive oil.

  • 04

    Place sliced onion, cook and caramelize for 15 - 20 minutes until they turn golden brown.

    Rolled out the puff pastry and place it on top of a cookie sheet.

  • 06

    Spread the softened goat cheese and top with black pepper.

  • 07

    Spoon the caramelized onion over the goat's cheese.

    Bake for 20 minutes or until the pastry is puffed and golden.
