Ingredients
Serves 4-6
2 yellow squash, sliced
2 zucchini , sliced
1⁄2 cup shredded mozzarella cheese
1⁄2 cup grated parmesan cheese
2tablespoons of freshly chopped fresh basil (HAS to be fresh- dried doesn't work)
3tablespoons extra virgin olive oil
2 garlic cloves, minced
Directions
Saute squash and zucchini in olive oil on medium heat for 4 minutes.
Add garlic and saute until squash and zucchini become transparent (about 2 or 3 more minutes).
Remove from heat. Add basil and mozzarella and toss. Shake parmesan over the top and serve.
