Ingredients

Serves 6-8

  • 2cups chickpeas, drained and rinsed

  • 2tablespoons smooth cashew butter (almond butter works too)

  • 1large garlic clove

  • 1⁄3 cup olive oil

  • 1⁄4 cup lemon juice

  • 1teaspoon black pepper

  • 1teaspoon coriander

  • 1teaspoon cumin

  • 1teaspoon fennel seed

  • 1⁄4 teaspoon paprika

  • 1⁄4 teaspoon cayenne pepper

  • 3tablespoons water

    Put all the ingredients in the food processor and blend until smooth. Refrigerate for up to 4 days.
