Ingredients

Serves 4

  • 2tablespoons unsalted butter

  • 1⁄4 lb portuguese sausage

  • 1 1⁄2 cups yukon gold potatoes

  • 3⁄4 cup red bell pepper

  • 2tablespoons serrano peppers

  • 1tablespoon paprika

  • 1teaspoon black pepper

  • 2teaspoons salt

  • 8 eggs

  • 1tablespoon heavy cream

  • 1 orange

Directions

    Pre-Heat oven to 350°F.

    Slice the sausage on the bias about 1/4 thick. Place the sauage into the cast iron skillet and saute until brown; about 5-minutes. Remove sausage and lay on paper towels.

    Add potatoes, peppers, paprika, salt and pepper to the skillet. Saute until the vegetables are soft; about 3 minutes.

    In a bowl add cream and cracked eggs. Whip until combined.

    Place the sausage in the skillet with the vegetables and stir well.

    Pour the beaten eggs into the skillet. Place skillet in pre-heated oven.

    Bake: 30 minutes.

  • 08

    GARNISH: Fresh Orange Slices.
