Description

This Frittata is your complete breakfast. The Portuguese sausage is a little spicy but blends in well with the potatoes and seasoned vegetables. The complete Breakfast Frittata can be completed in 30 minutes. I like to use the fresh seasonal vegetables, peppers, potatoes and onions. The flavor is outstanding. Farm fresh eggs complete this wonderful Frittata.

Ingredients

Serves : 4
  • 2 unsalted butter


  • 1⁄4 sausage


  • 1 1⁄2 yukon gold potatoes


  • 3⁄4 red bell pepper


  • 2tablespoons serrano peppers


  • 1 paprika


  • 1 black pepper


  • 2 salt


  • 8 eggs


  • 1 heavy cream


  • 1 orange

Directions

  • Pre-Heat oven to 350°F.
  • Slice the sausage on the bias about 1/4 thick. Place the sauage into the cast iron skillet and saute until brown; about 5-minutes. Remove sausage and lay on paper towels.
  • Add potatoes, peppers, paprika, salt and pepper to the skillet. Saute until the vegetables are soft; about 3 minutes.
  • In a bowl add cream and cracked eggs. Whip until combined.
  • Place the sausage in the skillet with the vegetables and stir well.
  • Pour the beaten eggs into the skillet. Place skillet in pre-heated oven.
  • Bake: 30 minutes.
  • GARNISH: Fresh Orange Slices.
