If you enjoy the flavour of rhubarb you will love this unusual drink which is especially refreshing on a hot summer?s day. I'm not entirely sure how much this makes.

Ingredients
Serves : 2
7 1⁄2 gingerroot
900 rhubarb
100 caster sugar
2 cloves
1 1⁄4 water
mint leaf
Directions
Bruise the root ginger with a rolling pin.
Place the rhubarb, sugar, cloves and ginger in a large saucepan and pour in the water.
Bring to the boil and simmer gently until the rhubarb is soft, replacing any water that evaporates.
