Ingredients

Serves 8

  • 1 (12 ounce) bag Baby Spinach

  • 1 (8 ounce) package bean sprouts

  • 3stalks celery, sliced

  • 2⁄3 cup raisins

  • 2cups sliced mushrooms

  • 2 sweet red peppers, chopped small

  • 1teaspoon parsley

  • 2cups cashews

  • 1cup rice, cooked and cooled

  • vinaigrette

  • 1⁄4 cup soy sauce

  • 1⁄2 cup vegetable oil or 1⁄2 cup olive oil, your preference

  • 3 garlic cloves, minced

Directions

    Toss veggies in a bowl.

    Mix vinaigrette in a separate bowl and allow to marinate for an hour.

  • 03

    Pour vinaigrette over salad just before you are ready to serve and toss.
