Ingredients

Serves 1

  • 2cups shredded leaf lettuce (red leaf or romaine is good)

  • 1⁄8 cup canned corn niblet (canned or thawed frozen)

  • 1⁄8 cup black beans (canned rinsed)

  • 2tablespoons minced onions

  • 1small diced tomatoes

  • 1teaspoon dried cilantro

  • 1 lime, juice of

  • 1teaspoon honey

Directions

    Mix lime juice, honey and cilantro, Adjust seasoning to taste, set aside.

    Wash lettuce and pat dry.

    Shred lettuce or lay on cutting board and slice in thin strips.

  • 04

    Place on plate.

  • 05

    Sprinkle corn over lettuce.

  • 06

    Sprinkle beans over lettuce.

  • 07

    Peel and mince onion, sprinkle over salad.

  • 08

    Wash, peel, dice tomato over salad.

  • 09

    Add desired amount of salad dressing.

  • 10

    Salt and pepper if desired.
