Ingredients

Serves 6-8

  • 1⁄3 cup olive oil

  • 2cups onions , finely chopped

  • 3⁄4 cup celery, chopped

  • 1cup green pepper, chopped

  • 1cup carrot , chopped

  • 1tablespoon garlic , minced

  • 2cups mushrooms , chopped

  • 1⁄4 teaspoon red pepper flakes

  • 1tablespoon cumin, ground

  • 1teaspoon dried basil

  • 2tablespoons chili powder

  • 1teaspoon dried oregano

  • 2teaspoons salt

  • 1⁄2 teaspoon pepper

  • 2cups tomato juice

  • 3⁄4 cup Bulgar wheat

  • 2cups tomatoes , chopped

  • 2cups kidney beans, undrained

  • 1⁄2 teaspoon Tabasco sauce

  • 2tablespoons lemon juice

  • 3tablespoons tomato paste

  • 1tablespoon Worcestershire sauce

  • 1⁄4 cup dry red wine, can use white

  • 2tablespoons canned diced green chiles

Directions

    Have all ingredients ready. I mix all spices together in a small bowl ahead of time.

    In a large pot, heat the olive oil over high heat, add onions, celery, green peppers, carrots, garlic, mushrooms, spices, salt and pepper. Cook stirring for 1 or 2 minutes.

    Add remaining ingredients and bring to a boil, stirring.

    Reduce heat and simmer for 20-30 minutes uncovered.

    If too thick, chili can be thinned with tomato juice.
