Ingredients

Serves 4

  • 1 1⁄2 cups cubed cooked ham

  • 1tablespoon olive oil

  • 1cup chopped onion

  • 3⁄4 cup chopped green sweet pepper (bell)

  • 2 minced garlic cloves (I actually prefer a little more)

  • 1 (14 ounce) can stewed tomatoes

  • 1 (14 ounce) can chicken broth

  • 1teaspoon cajun seasoning

  • 1 1⁄2 cups quick-cooking rice

  • salt & fresh ground pepper

Directions

    Heat olive oil in large sauce pan over medium heat.

    Cook the onion, sweet pepper and garlic in the oil for about 5 minutes or until tender.

    Stir in the can of tomatoes, chicken broth, ham and seasonings.

    Bring to a boil then reduce heat to simmer.

    Simmer, uncovered, for 5 minutes.

  • 06

    Stir in rice and remove from heat.

  • 07

    Cover and let stand about 5 minutes, or until rice is tender.
