  • 2 all-purpose flour


  • 2 eggs


  • 1⁄2 cup cooking oil


  • 1 buttermilk


  • 1⁄2 baking powder


  • 1⁄2 baking soda


  • 1⁄2 salt


  • 1cup cream-style corn


  • 1 whole kernel corn


  • 1 (4 ounce) candiced jalapeno peppers, drained


  • 3⁄4 onion


  • 1 1⁄2 sharp cheddar cheese

Directions

  • Preheat oven to 375 degrees.
  • Mix all ingredients together just until blended well, and pour into greased 10" cast-iron skillet (or 13x9 baking dish).
  • Bake 35-40 minutes, or until top is deep golden-brown.
