Ingredients

Serves : 6 serving
  • 9 eggs


  • 1/2 Cup cream


  • 1 red onion


  • 1 bell pepper


  • 1 tomato


  • 2 Cloves garlic


  • Handful 1 fresh parsley


  • 1 Teaspoon salt


  • 1/2 Teaspoon pepper


  • oil


  • 1 carrot, shredded


  • 1/2 Cup cheddar cheese, shredded

Directions

  • Preheat oven to 350F. Chop all veggies (shred carrot) and saute until tender in oil of choice (I use coconut). Set aside to cool a bit.
  • Whisk together eggs, salt, pepper, cream, and cheese. Stir in cooled veggies.
  • Generously oil a round baking dish and pour in egg and veggie mixture. Bake 20-30 minutes, until set in the center. Allow the frittata to cool at least 5 minutes, and serve.
