Ingredients

Serves :
  • kosher salt


  • black pepper


  • tumeric


  • smoked paprika


  • onion powder


  • apple cider vinegar


  • rice wine vinegar w/garlic in it


  • 1/2 cup thai chile-garlic paste--lots. prolly or a bit more.


  • squirt of honey


  • big splash of fish sauce


  • big splash of soy sauce


  • toasted sesame oil (just a touch)


  • one bunch small-ish of green onions, mostly the white and light green parts, whirred up in the food processor.


  • 30 drumettes


  • peanut oil (or other vegetable oil) for shallow frying

Directions

  • I mixed all that up together, sprinkled it on the wings and let them sit for about half an hour.
  • Mix all the ingredients together in the food processor and process until almost smooth.
  • Dry the wings/drumettes off well and brown in batches in peanut oil in a heavy skillet.
  • Remove to a large bowl or pot. Set aside.
  • In the same skillet, reduce the wet stuff for a few minutes to turn it into a thin glaze.
  • Pour over the browned wings and toss to coat.
  • Place wings in a single layer on a rimmed baking sheet. Cover w/foil and bake at 375F for 35-ish minutes.
  • When the wings are done, take them out and put them on a large plate. Cover to keep warm.
  • Carefully pour the glaze and chicken juices from the pan back into the skillet.
  • Add a squirt or two more honey and reduce to a thick syrup.
  • Turn off the heat but leave the skillet on the burner. Add another touch of toasted sesame oil. Dump all the wings back into the skillet and toss with tongs to coat the wings.
  • You can either eat them right away or put them under the broiler for just a couple of minutes before eating.
