Baked Mango Donuts With Mango Glaze

  • 125g all purpose flour or wheat flour

  • 1 tbsp Canola oil

  • 1/2 cup buttermilk

  • 1/4 cup mango puree

  • 1 beaten egg

  • 150 g sugar adjust

  • 1/8 teaspoon salt

  • 1 teaspoon baking powder

  • 1 ripe mango chopped

  • 11/4 cup icing sugar


  • Preheat oven to 180 and grease donut mould
  • In a bowl, mix flour, sugar salt and baking powder
  • In another bowl, blend egg, oil, buttermilk, mango puree until well combined
  • Add Dry ingredients and mix until well combined
  • Pour batter in greased donut mould. Fill upto 2/3 level
  • Bake for 16-18 minutes until done
  • Allow to cool for 30 minutes. Demould and allow to cool completely
  • While donuts are baking, prepare mango glaze. Puree chopped mangoes. In a saucepan mix mango puree and icing sugar until mixture thickens and coats on back of spoon
  • Allow mixture to cool slightly. Coat mango donuts with mango glaze
  • Garnish with sprinklers or nuts. This is optional
  • Best served cold
